Sheepshead are primarily targeted during the winter months when the water is cold. They are found in large numbers on the nearshore reefs, and are caught with small hooks and half a shrimp. The \"convict fish\" are notorious bait thieves and can be difficult and frustrating to hook, requiring fast reflexes and a firm hook-set. They are good eating, but provide very little meat for their size. On Enterprise we will keep only the largest to filet at the dock. If you would like to fish for sheepshead for meat value, and keep every little one we catch, I will refer you to a different charter operation.
